Ingredients
- 500g Fresh spinach (blanched and pureed)
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Chili powder
- 4 cloves Garlic (finely diced)
- 2 tbsp Butter
Cooking Method
- The Architect Sauté diced onions until golden brown; don't rush the foundation.
- The Bloom Add the spices and a splash of water to form a thick, yellow paste.
- The Wilt Add the pureed spinach; simmer for 5 minutes until it darkens slightly.
- The Tarka In a separate pan, melt butter and fry the garlic until it is deep golden and fragrant.
- The Finish Pour the garlic butter over the spinach and serve immediately.
