Ingredients: 500g Fresh spinach (blanched and pureed), 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Chili powder, 4 cloves Garlic (finely diced), 2 tbsp Butter...

Ingredients

  • 500g Fresh spinach (blanched and pureed)
  • 1 tsp Turmeric
  • 1 tsp Cumin seeds
  • 1 tsp Chili powder
  • 4 cloves Garlic (finely diced)
  • 2 tbsp Butter

Cooking Method

  1. The Architect Sauté diced onions until golden brown; don't rush the foundation.
  2. The Bloom Add the spices and a splash of water to form a thick, yellow paste.
  3. The Wilt Add the pureed spinach; simmer for 5 minutes until it darkens slightly.
  4. The Tarka In a separate pan, melt butter and fry the garlic until it is deep golden and fragrant.
  5. The Finish Pour the garlic butter over the spinach and serve immediately.
