(Our Play on Steak Bites with Maître d'Hôtel Butter)

- 400g Beef sirloin (cubed)
- 4 cloves Garlic (minced)
- 100g Butter
- 1 tsp Black pepper
- 1 tsp Salt
- Handful of fresh Parsley
- 1 Lemon (juiced)
Cooking Method
- The Scorch Sear beef cubes in 1 tbsp oil on maximum heat for 3 minutes until charred and blackened; remove.
- The Architect Melt butter in the same pan; sauté garlic until deep golden and nutty.
- The Bloom Add pepper and a tiny 15ml splash of lemon juice to the butter; the steam will release the allicin.
- The Marriage Return the meat; toss in the herb-butter until every surface is lacquered.
- The Final Flourish Finish with a massive hit of raw parsley and extra lemon zest.
