- 200g Spaghetti
- 6 cloves Garlic (finely sliced)
- 80ml Extra virgin olive oil
- 2 tsp Chili flakes
- 1 tsp Salt
- Fresh Parsley
- 1 Lemon (juiced)
Cooking Method
- The Boil Cook pasta in salted water until 'al dente'; reserve 50ml of the starchy pasta water.
- The Architect In a wide pan, gently heat the olive oil and garlic until the slices are pale golden and fragrant.
- The Bloom Add chili flakes and the reserved 50ml pasta water; whisk vigorously to form a golden, spicy emulsion.
- The Marriage Toss the spaghetti through the garlic oil until every strand is glistening.
- The Final Flourish Top with a massive hit of raw parsley and a squeeze of lime to lift the fat.
