Ingredients: 200g Spaghetti, 6 cloves Garlic (finely sliced), 80ml Extra virgin olive oil, 2 tsp Chili flakes, 1 tsp Salt, Fresh Parsley, 1 Lemon (juiced)...

Ingredients

  • 200g Spaghetti
  • 6 cloves Garlic (finely sliced)
  • 80ml Extra virgin olive oil
  • 2 tsp Chili flakes
  • 1 tsp Salt
  • Fresh Parsley
  • 1 Lemon (juiced)

Cooking Method

  1. The Boil Cook pasta in salted water until 'al dente'; reserve 50ml of the starchy pasta water.
  2. The Architect In a wide pan, gently heat the olive oil and garlic until the slices are pale golden and fragrant.
  3. The Bloom Add chili flakes and the reserved 50ml pasta water; whisk vigorously to form a golden, spicy emulsion.
  4. The Marriage Toss the spaghetti through the garlic oil until every strand is glistening.
  5. The Final Flourish Top with a massive hit of raw parsley and a squeeze of lime to lift the fat.
