THE GARLIC-FIRE REEF
(Our Play on Polvo à Lagareiro - DNA style)

- 500g Cooked Octopus tentacles
- 10 cloves Garlic (smashed)
- 200ml Olive oil
- 1 tsp Chili flakes
- 1 tsp Salt
- 500g Baby potatoes (punched)
Cooking Method
- The Swell Boil potatoes until soft; 'punch' each one to crack the skins.
- The Scorch Place octopus and potatoes in a tray with half the oil; roast at 220°C until rock-hard charred.
- The Bloom Heat remaining oil in a pan; add garlic and chili with a 10ml splash of water; the sizzle will bloom the allicin.
- The Marriage Pour the hot garlic-fire oil over the charred reef while still in the roasting tray.
- The Final Flourish Finish with a massive hit of raw fresh parsley and extra sea salt.
