THE GARLIC-FIRE REEF

Ingredients: 500g Cooked Octopus tentacles, 10 cloves Garlic (smashed), 200ml Olive oil, 1 tsp Chili flakes, 1 tsp Salt, 500g Baby potatoes (punched)...

Ingredients

  • 500g Cooked Octopus tentacles
  • 10 cloves Garlic (smashed)
  • 200ml Olive oil
  • 1 tsp Chili flakes
  • 1 tsp Salt
  • 500g Baby potatoes (punched)

Cooking Method

  1. The Swell Boil potatoes until soft; 'punch' each one to crack the skins.
  2. The Scorch Place octopus and potatoes in a tray with half the oil; roast at 220°C until rock-hard charred.
  3. The Bloom Heat remaining oil in a pan; add garlic and chili with a 10ml splash of water; the sizzle will bloom the allicin.
  4. The Marriage Pour the hot garlic-fire oil over the charred reef while still in the roasting tray.
  5. The Final Flourish Finish with a massive hit of raw fresh parsley and extra sea salt.
