Ingredients: 1kg Fresh Mussels, 8 cloves Garlic (minced), 100ml Extra virgin olive oil, 1 tbsp Chili flakes, 1 tsp Black pepper, 150ml Dry White Wine, 1 tbsp Brandy...

  • 1kg Fresh Mussels
  • 8 cloves Garlic (minced)
  • 100ml Extra virgin olive oil
  • 1 tbsp Chili flakes
  • 1 tsp Black pepper
  • 150ml Dry White Wine
  • 1 tbsp Brandy

Cooking Method

  1. The Architect Heat oil and garlic until it starts to turn a pale biscuit gold—do not brown.
  2. The Bloom Add chili and pepper with a 30ml splash of wine; the steam will release the sharp allicin.
  3. The Swell Add remaining wine and brandy; bring to a rolling boil. Add mussels.
  4. The Marriage Cover tightly for 5 minutes until all have opened and are lacquered in red oil.
  5. The Final Flourish Finish with a massive hit of raw fresh parsley and serve with charred bread.
