THE GARLIC-FIRE MARINE
(Our Play on Croatian Mussels with Heavy Chili)
Ingredients: 1kg Fresh Mussels, 8 cloves Garlic (minced), 100ml Extra virgin olive oil, 1 tbsp Chili flakes, 1 tsp Black pepper, 150ml Dry White Wine, 1 tbsp Brandy...

- 8 cloves Garlic (minced)
- 100ml Extra virgin olive oil
- 1 tbsp Chili flakes
- 1 tsp Black pepper
- 150ml Dry White Wine
- 1 tbsp Brandy
Cooking Method
- The Architect Heat oil and garlic until it starts to turn a pale biscuit gold—do not brown.
- The Bloom Add chili and pepper with a 30ml splash of wine; the steam will release the sharp allicin.
- The Swell Add remaining wine and brandy; bring to a rolling boil. Add mussels.
- The Marriage Cover tightly for 5 minutes until all have opened and are lacquered in red oil.
- The Final Flourish Finish with a massive hit of raw fresh parsley and serve with charred bread.
