THE GARLIC-FIRE EARS

Ingredients: 200g Orecchiette pasta, 300g Broccoli florets (tiny), 6 cloves Garlic (finely sliced), 60ml Olive oil, 2 tsp Chili flakes, 1 tsp Salt...

  • 200g Orecchiette pasta
  • 300g Broccoli florets (tiny)
  • 6 cloves Garlic (finely sliced)
  • 60ml Olive oil
  • 2 tsp Chili flakes
  • 1 tsp Salt

Cooking Method

  1. The Boil Cook pasta and broccoli in the same pot of salted water until 'al dente'.
  2. The Architect In a wide pan, heat the oil and sauté garlic until it is a pale biscuit gold.
  3. The Bloom Add chili flakes and a 50ml splash of pasta water; whisk vigorously to form a golden fire-oil.
  4. The Marriage Toss the drained pasta and broccoli through the oil until every 'ear' is filled with the fire-silk.
  5. The Final Flourish Top with a massive hit of raw manchego shavings and fresh black pepper.
