THE GARLIC-FIRE EARS
(Our Play on Spanish Orecchiette with Broccoli)
Ingredients: 200g Orecchiette pasta, 300g Broccoli florets (tiny), 6 cloves Garlic (finely sliced), 60ml Olive oil, 2 tsp Chili flakes, 1 tsp Salt...
Ingredients
- 200g Orecchiette pasta
- 300g Broccoli florets (tiny)
- 6 cloves Garlic (finely sliced)
- 60ml Olive oil
- 2 tsp Chili flakes
- 1 tsp Salt
Cooking Method
- The Boil Cook pasta and broccoli in the same pot of salted water until 'al dente'.
- The Architect In a wide pan, heat the oil and sauté garlic until it is a pale biscuit gold.
- The Bloom Add chili flakes and a 50ml splash of pasta water; whisk vigorously to form a golden fire-oil.
- The Marriage Toss the drained pasta and broccoli through the oil until every 'ear' is filled with the fire-silk.
- The Final Flourish Top with a massive hit of raw manchego shavings and fresh black pepper.
