THE GARLIC-FIRE DISKS
(Our Play on Piri-Piri Pan-Fried Scallops)

Ingredients
- 300g Scallops
- 4 cloves Garlic (minced)
- 50g Butter
- 1 tsp Piri-Piri flakes
- 0.5 tsp Smoked paprika
- 1 tbsp Lemon juice
- 1 tbsp Honey
Cooking Method
- The Scorch Sear scallops in a white-hot pan for 90 seconds until charred; remove.
- The Architect Melt butter and sauté garlic until golden brown.
- The Bloom Add spices and honey with a tiny 10ml splash of water; the sizzle will release the chili oils.
- The Marriage Return scallops for 30 seconds; toss until lacquered in the fire-silk.
- The Final Flourish Finish with raw lemon zest and fresh raw chives.
