THE GARLIC-FIRE BIRD
(Our Play on Bulgarian Grilled Chicken with Chili Oil)

- 6 cloves Garlic (minced)
- 100ml Sunflower oil
- 1 tbsp Chili flakes
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1 Lemon (juiced)
- Fresh Parsley
Cooking Method
- The Architect Gently heat half the oil and garlic until it starts to turn a pale biscuit gold.
- The Bloom Add spices with a tiny 10ml splash of lemon juice; the sudden sizzle will release the piquant oils.
- The Coat Rub the chicken heavily with the hot garlic-fire oil; roast at 200°C for 30 minutes until blackened.
- The Scorch Baste with the remaining oil every 10 minutes until the skin is a charred fire-shield.
- The Final Flourish Finish with a massive squeeze of raw lemon juice and extra raw parsley.
