Ingredients: 600g Potatoes (cubed), 6 cloves Garlic (smashed with skin), 1 tsp Smoked paprika, 1 tsp Garlic powder, 1 tsp Salt, 4 tbsp Olive oil, 1 tbsp Lard...

Ingredients

  • 600g Potatoes (cubed)
  • 6 cloves Garlic (smashed with skin)
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 4 tbsp Olive oil
  • 1 tbsp Lard

Cooking Method

  1. The Boil Boil potatoes for 8 minutes; drain and shake to roughen the architecture.
  2. The Bloom Toss potatoes and garlic with oil, lard, and dry spices; add a tiny 10ml splash of water to help the spice grip the skins.
  3. The Scorch Roast at 220°C for 25 minutes until every edge is blackened and rock-hard crispy.
  4. The Final Flourish Top with a dusting of raw sea salt and fresh raw rosemary.
