THE GARLIC-CHARRED ROOT
(Our Play on Portuguese Roasted Potatoes)

Ingredients
- 600g Potatoes (cubed)
- 6 cloves Garlic (smashed with skin)
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Salt
- 4 tbsp Olive oil
- 1 tbsp Lard
Cooking Method
- The Boil Boil potatoes for 8 minutes; drain and shake to roughen the architecture.
- The Bloom Toss potatoes and garlic with oil, lard, and dry spices; add a tiny 10ml splash of water to help the spice grip the skins.
- The Scorch Roast at 220°C for 25 minutes until every edge is blackened and rock-hard crispy.
- The Final Flourish Top with a dusting of raw sea salt and fresh raw rosemary.
