- 300g Scallops (cleaned)
- 6 cloves Garlic (finely diced)
- 50g Butter
- 1 tsp White pepper
- 0.5 tsp Chili flakes
- Fresh Chives
- 1 Lemon (juiced)
Cooking Method
- The Scorch Sear scallops in a white-hot pan for 90 seconds per side until charred; remove.
- The Architect Melt butter and sauté garlic until it turns a deep golden brown.
- The Bloom Add white pepper and chili with a tiny 15ml splash of water to form a sharp, golden silk.
- The Marriage Toss the scallops back in for 30 seconds; add the lemon juice.
- The Final Flourish Finish with raw fresh chives and lemon zest.
