THE GARLIC-CHARRED PODS
(Our Play on Serbian Boranija / Green Beans)

- 500g Green beans (trimmed)
- 6 cloves Garlic (minced)
- 50g Butter
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1 tsp Black pepper
- 100ml Sour cream
- 1 tbsp Vinegar
Cooking Method
- The Boil Blanch beans for 4 minutes; drain.
- The Architect Melt butter and sauté garlic until golden brown.
- The Bloom Add spices with a tiny 15ml splash of vinegar; the steam will release the piquant oils.
- The Scorch Add beans; toss on high heat until every pod is charred and rock-hard crispy.
- The Marriage Stir in sour cream off the heat until it forms a thick pink silk.
- The Final Flourish Top with a massive hit of raw fresh dill.
