Ingredients: 400g Green beans (trimmed), 1 Large onion (finely sliced), 3 cloves Garlic (minced), 50g Butter, 1 tsp Black pepper, 1 tsp Salt, Fresh Parsley, 1 Lemon (juiced)...

  • 400g Green beans (trimmed)
  • 1 Large onion (finely sliced)
  • 3 cloves Garlic (minced)
  • 50g Butter
  • 1 tsp Black pepper
  • 1 tsp Salt
  • Fresh Parsley
  • 1 Lemon (juiced)

Cooking Method

  1. The Boil Blanch beans for 3 minutes; drain and shock in cold water.
  2. The Architect Fry onions in butter for 8 minutes until they turn a dark, sweet mahogany.
  3. The Bloom Add garlic and pepper with a tiny 15ml splash of water; the steam will release the allicin and prevent burning.
  4. The Scorch Add the beans; toss on high heat until the tips are charred and coated in onion-silk.
  5. The Final Flourish Finish with raw parsley and a massive squeeze of lemon.
