THE GARLIC-CHARRED PODS
(Our Play on French Green Beans Lyonnaise)

- 1 Large onion (finely sliced)
- 3 cloves Garlic (minced)

- 1 tsp Salt
- Fresh Parsley
- 1 Lemon (juiced)
Cooking Method
- The Boil Blanch beans for 3 minutes; drain and shock in cold water.
- The Architect Fry onions in butter for 8 minutes until they turn a dark, sweet mahogany.
- The Bloom Add garlic and pepper with a tiny 15ml splash of water; the steam will release the allicin and prevent burning.
- The Scorch Add the beans; toss on high heat until the tips are charred and coated in onion-silk.
- The Final Flourish Finish with raw parsley and a massive squeeze of lemon.
