THE GARLIC-CHARRED MARINE TANGLE
(Our Play on Squid Pasta with Garlic & Chili)

- 400g Squid rings
- 6 cloves Garlic (finely sliced)
- 60ml Olive oil
- 2 tsp Chili flakes
- 1 tsp Salt
- Handful of fresh Parsley
- Lemon juice
Cooking Method
- The Scorch High-heat stir-fry squid in 1 tbsp oil for 90 seconds until charred and curled; remove.
- The Architect Heat the remaining oil and sauté garlic until it is a pale biscuit gold.
- The Bloom Add chili and salt with a tiny 20ml splash of pasta water; the hiss will release the sharp aromatics.
- The Marriage Toss cooked spaghetti and squid through the garlic-oil until lacquered.
- The Final Flourish Finish with raw parsley and a massive squeeze of lemon.
