(Our Play on Clams in Garlic White Wine)

- 6 cloves Garlic (finely sliced)
- 100ml White wine
- 1 tsp Chili flakes
- 1 tsp Black pepper
- 50g Butter
- Fresh Parsley
Cooking Method
- The Architect Gently heat oil and garlic until the slices are pale golden and fragrant.
- The Bloom Add chili and pepper with a tiny 15ml splash of wine to form a spicy emulsion.
- The Swell Pour in the remaining wine; bring to a rolling boil.
- The Marriage Add clams; cover tightly and cook for 5 minutes until shells open.
- The Final Flourish Finish with the butter and a massive hit of raw fresh parsley.
