(Our Play on Clams in Garlic & Sherry)

- 500g Fresh Clams
- 6 cloves Garlic (finely sliced)
- 100ml Dry Sherry
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 50g Butter
- Fresh Parsley
Cooking Method
- The Architect Gently heat oil and garlic until the slices are pale golden and fragrant.
- The Bloom Add paprika and pepper with a tiny 15ml splash of sherry to form a smoky emulsion.
- The Swell Pour in the remaining sherry; bring to a rolling boil.
- The Marriage Add clams; cover tightly and cook for 5 minutes until shells open.
- The Final Flourish Finish with the butter and a massive hit of raw fresh parsley.
