THE GARLIC-CHARRED MARINE
(Our Play on Calamares a la Plancha)

Cooking Method
- The Scorch Heat a heavy flat pan until smoking; fry squid for 90 seconds until charred and curled; remove.
- The Architect In the same pan, fry the garlic in oil until golden.
- The Bloom Add chili flakes with a tiny 15ml splash of water; the steam will release the sharp spice oils.
- The Marriage Toss the squid back in for 30 seconds; add the lemon juice.
- The Final Flourish Finish with a massive hit of raw fresh parsley.
