Ingredients: 400g Sweetcorn (fresh or canned), 2 cloves Garlic (minced), 30g Butter, 1 tsp Chili powder, 1 tsp Salt, 2 tbsp Mayonnaise, 50g Crumbled Feta...

Ingredients

  • 400g Sweetcorn (fresh or canned)
  • 2 cloves Garlic (minced)
  • 30g Butter
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 2 tbsp Mayonnaise
  • 50g Crumbled Feta

Cooking Method

  1. The Scorch Fry corn in butter on maximum heat until the kernels are blackened and popping.
  2. The Architect Add garlic; sauté for 30 seconds until golden brown.
  3. The Bloom Add chili and salt with a tiny 10ml splash of lime juice to form a spicy red oil that coats the corn.
  4. The Marriage Remove from heat; stir in the mayonnaise and cheese until it forms a thick silk.
  5. The Final Flourish Garnish with a massive hit of raw fresh coriander and lime juice.
