- 400g Sweetcorn (fresh or canned)
- 2 cloves Garlic (minced)
- 30g Butter
- 1 tsp Chili powder
- 1 tsp Salt
- 2 tbsp Mayonnaise
- 50g Crumbled Feta
Cooking Method
- The Scorch Fry corn in butter on maximum heat until the kernels are blackened and popping.
- The Architect Add garlic; sauté for 30 seconds until golden brown.
- The Bloom Add chili and salt with a tiny 10ml splash of lime juice to form a spicy red oil that coats the corn.
- The Marriage Remove from heat; stir in the mayonnaise and cheese until it forms a thick silk.
- The Final Flourish Garnish with a massive hit of raw fresh coriander and lime juice.
