THE GARLIC-CHARRED GREENS
(Our Play on Grelos Salteados / Sautéed Rapini)

Ingredients
- 400g Rapini or Broccolini
- 6 cloves Garlic (finely sliced)
- 50ml Olive oil
- 1 tsp Chili flakes
- 1 tsp Salt
- 1 Lemon (juiced)
Cooking Method
- The Boil Blanch the greens in salted water for 3 minutes; drain.
- The Architect Heat oil and sauté garlic until it turns a pale biscuit gold—do not brown.
- The Bloom Add chili flakes with a tiny 15ml splash of water; the sizzle will bloom the heat and release the allicin.
- The Scorch Add the greens; toss on maximum heat for 2 minutes until the tips are charred.
- The Final Flourish Drizzle with raw lemon juice and a final rain of raw extra virgin olive oil.
