THE GARLIC-CHARRED GREENS
(Our Play on Broccoli Rabe with Chili)

Ingredients
- 400g Tenderstem Broccoli or Broccoli Rabe
- 5 cloves Garlic (sliced)
- 3 tbsp Olive oil
- 2 tsp Chili flakes
- 1 tsp Salt
Cooking Method
- The Scorch Fry the broccoli in a hot oiled pan until the florets are blackened and charred.
- The Architect Push to the side; sauté garlic until golden brown.
- The Bloom Add chili flakes and a tiny 20ml splash of water; the steam will cook the stems while blooming the fire.
- The Marriage Toss everything for 1 minute until the oil is red and the greens are coated.
- The Final Flourish Finish with a squeeze of fresh lemon and a dusting of raw parmesan.
