THE GARLIC-CHARRED FUNGAL BREAD
(Our Play on Spanish Mushroom Toast)
Ingredients: 400g Mixed mushrooms (finely chopped), 2 cloves Garlic (minced), 3 tbsp Olive oil, 1 tsp Black pepper, 1 tsp Smoked paprika, 4 slices Sourdough bread (toasted)...

- 400g Mixed mushrooms (finely chopped)
- 2 cloves Garlic (minced)
- 3 tbsp Olive oil
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- 4 slices Sourdough bread (toasted)
Cooking Method
- The Scorch Fry mushrooms in a dry pan on maximum heat until dark and charred; remove.
- The Architect In the same pan, heat oil and sauté garlic until fragrant.
- The Bloom Add paprika and pepper with a tiny 10ml splash of water to release the perfume.
- The Marriage Toss mushrooms back in; stir for 1 minute then pile onto the toasted bread.
- The Final Flourish Finish with a heavy hit of raw manchego and a drizzle of honey.
