THE GARLIC-CHARRED CORN
(Our Play on Esquites / Corn Salad)
Ingredients: 400g Sweetcorn (fresh or canned), 2 cloves Garlic (minced), 1 tbsp Butter, 1 tsp Chili powder, 1 tsp Smoked paprika, 2 tbsp Mayonnaise, 30g Feta (crumbled)...

- 400g Sweetcorn (fresh or canned)
- 2 cloves Garlic (minced)
- 1 tbsp Butter
- 1 tsp Chili powder
- 1 tsp Smoked paprika
- 2 tbsp Mayonnaise
- 30g Feta (crumbled)
Cooking Method
- The Scorch Fry corn in butter on maximum heat until the kernels are charred and blackened.
- The Architect Add garlic; sauté until golden and fragrant.
- The Bloom Add spices and a 15ml splash of water to form a sticky, red spice-oil that coats the corn.
- The Marriage Remove from heat; stir in the mayonnaise and cheese until it forms a thick silk.
- The Final Flourish Garnish with fresh raw coriander and a massive hit of lime juice.
