- 4 Chicken thighs (bone-in)
- 1 tbsp Piri-Piri flakes
- 1 tsp Garlic powder
- 1 tsp Salt
- 50ml Olive oil
- 50ml White wine
- 1 tbsp Honey
Cooking Method
- The Coat Rub chicken with salt and oil; grill skin-side down on high heat until rock-hard and charred.
- The Bloom Whisk piri-piri, honey, and garlic powder with a 30ml splash of wine; the liquid will release the spice oils.
- The Marriage Baste the chicken heavily with the spiced silk; return to grill for 10 minutes.
- The Scorch Continue basting until the skin is a blackened, sticky fire-shield.
- The Final Flourish Serve with raw lemon wedges and a dusting of raw piri-piri flakes.
