Ingredients: 4 Slices of sourdough or rustic bread, 2 cloves Garlic (whole), 2 Ripe Tomatoes (halved), 1 tsp Salt, Pinch of Black pepper, 50ml Extra virgin olive oil...

Ingredients

  • 4 Slices of sourdough or rustic bread
  • 2 cloves Garlic (whole)
  • 2 Ripe Tomatoes (halved)
  • 1 tsp Salt
  • Pinch of Black pepper
  • 50ml Extra virgin olive oil

Cooking Method

  1. The Scorch Toast the bread until the edges are blackened and charred.
  2. The Architect Rub the raw garlic cloves vigorously over the hot, rough bread surface.
  3. The Bloom Rub the cut side of the tomatoes onto the bread until only the skin remains; the nectar will swell into the grain.
  4. The Marriage Add a tiny 5ml splash of water to the salt before sprinkling; this helps the salt vanish into the tomato silk.
  5. The Final Flourish Finish with a heavy drizzle of raw olive oil.
