THE GARLIC-BREAD SILK
(Our Play on Migas à Alentejana)
Ingredients: 400g Stale sourdough bread (crumbled), 100ml Water, 100g Chouriço (minced), 100g Bacon (minced), 1 tsp Smoked paprika, 1 tsp Garlic powder, 100g Lard or Butter, 4 cloves Garlic (minced)...

- 400g Stale sourdough bread (crumbled)

- 100g Chouriço (minced)
- 100g Bacon (minced)

- 1 tsp Garlic powder
- 100g Lard or Butter
- 4 cloves Garlic (minced)
Cooking Method
- The Swell Soak the bread crumbs in water for 10 minutes until soft.
- The Scorch Fry chouriço and bacon in lard until crispy; remove meat.
- The Bloom Add garlic and spices to the hot fat with a tiny 10ml splash of water; the sizzle will release the smoke.
- The Marriage Add the soaked bread; toss and mash on medium heat until it absorbs the fat and forms a thick, golden silk.
- The Final Flourish Return meat; top with raw fresh coriander and serve as a base for meat.
