Ingredients: 400g King prawns, 2 Eggs, 400g Stale bread cubes, 300ml Prawn stock (hot), 8 cloves Garlic (minced), 100ml Olive oil, 1 tsp Chili flakes, 1 tsp Salt...

  • 400g King prawns
  • 2 Eggs
  • 400g Stale bread cubes
  • 300ml Prawn stock (hot)
  • 8 cloves Garlic (minced)
  • 100ml Olive oil
  • 1 tsp Chili flakes
  • 1 tsp Salt

Cooking Method

  1. The Swell Soak bread in hot stock for 10 minutes until it forms a thick pulp.
  2. The Architect Heat oil and sauté garlic and chili until golden.
  3. The Bloom Add prawns to the garlic oil; sear for 2 minutes until pink. remove.
  4. The Marriage Toss the bread pulp into the garlic oil; whisk vigorously until it forms a thick, creamy silk.
  5. The Silk Merge Stir in raw eggs off the heat until the mixture is glossy; return prawns.
  6. The Final Flourish Top with a massive hit of raw fresh coriander matchsticks.
