- 2 Eggs
- 400g Stale bread cubes
- 300ml Prawn stock (hot)
- 8 cloves Garlic (minced)
- 100ml Olive oil
- 1 tsp Chili flakes
- 1 tsp Salt
Cooking Method
- The Swell Soak bread in hot stock for 10 minutes until it forms a thick pulp.
- The Architect Heat oil and sauté garlic and chili until golden.
- The Bloom Add prawns to the garlic oil; sear for 2 minutes until pink. remove.
- The Marriage Toss the bread pulp into the garlic oil; whisk vigorously until it forms a thick, creamy silk.
- The Silk Merge Stir in raw eggs off the heat until the mixture is glossy; return prawns.
- The Final Flourish Top with a massive hit of raw fresh coriander matchsticks.
