Ingredients: 4 thick slices Stale bread, 2 Eggs, 8 cloves Garlic (minced to a paste), 1 tsp Black pepper, 1 tsp Salt, 1L Boiling water, 100ml Extra virgin olive oil, Massive handful of fresh Coriander...

Ingredients

  • 4 thick slices Stale bread
  • 2 Eggs
  • 8 cloves Garlic (minced to a paste)
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 1L Boiling water
  • 100ml Extra virgin olive oil
  • Massive handful of fresh Coriander

Cooking Method

  1. The Bloom In a large bowl, mash the garlic, salt, and pepper with a tiny 10ml splash of warm water to release the allicin perfume.
  2. The Silk Merge Add the olive oil and half the coriander to the bowl; stir into a green-garlic paste.
  3. The Swell Pour the boiling water into the bowl; drop in the raw eggs to poach in the residual heat for 3 minutes.
  4. The Marriage Place the bread slices in deep bowls; pour the garlic-mist and one egg over each.
  5. The Final Flourish Top with the remaining raw fresh coriander matchsticks.
