  • 600g Beef and Lamb mince mix
  • 6 cloves Garlic (pureed)
  • 1 tsp Baking soda
  • 1 tsp Black pepper
  • 1 tsp Aniseed (crushed)
  • 1 tsp Salt
  • 50ml Beef stock (cold)

Cooking Method

  1. The Build Knead meat with garlic puree, baking soda, and spices.
  2. The Bloom Slowly stir in the cold stock; the moisture will bloom the aniseed oils into the fat.
  3. The Rest Chill for 12 hours to let the flavor architecture deepen.
  4. The Scorch Form into cylinders; grill on maximum heat until rock-hard charred and juicy inside.
  5. The Final Flourish Serve with raw spicy mustard and fresh parsley.
