Cooking Method
- The Build Knead meat with garlic puree, baking soda, and spices.
- The Bloom Slowly stir in the cold stock; the moisture will bloom the aniseed oils into the fat.
- The Rest Chill for 12 hours to let the flavor architecture deepen.
- The Scorch Form into cylinders; grill on maximum heat until rock-hard charred and juicy inside.
- The Final Flourish Serve with raw spicy mustard and fresh parsley.
