THE GARDEN GEM-PEAS
(Our Play on Aloo Mutter)
Ingredients: 400g Potatoes (boiled and cubed), 1 Large onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Garam masala, 150g Frozen peas, 150ml Tomato passata...
Ingredients
- 400g Potatoes (boiled and cubed)
- 1 Large onion (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Garam masala
- 150g Frozen peas
- 150ml Tomato passata
Cooking Method
- The Architect Sauté onions in 2 tbsp oil until they are deep golden brown and the sugars have released.
- The Bloom Add spices and a 30ml splash of water to form a fragrant, bubbling paste that coats the ingredients perfectly.
- The Simmer Pour in the tomato passata and peas; bubble for 5 minutes until the sauce darkens.
- The Marriage Add the boiled potatoes; toss until they are glistening yellow and heated through.
- The Final Flourish Finish with a massive handful of fresh coriander and a squeeze of lime.
