Ingredients: 400g Potatoes (boiled and cubed), 1 Large onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Garam masala, 150g Frozen peas, 150ml Tomato passata...

Ingredients

  • 400g Potatoes (boiled and cubed)
  • 1 Large onion (finely diced)
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 1 tsp Cumin seeds
  • 1 tsp Garam masala
  • 150g Frozen peas
  • 150ml Tomato passata

Cooking Method

  1. The Architect Sauté onions in 2 tbsp oil until they are deep golden brown and the sugars have released.
  2. The Bloom Add spices and a 30ml splash of water to form a fragrant, bubbling paste that coats the ingredients perfectly.
  3. The Simmer Pour in the tomato passata and peas; bubble for 5 minutes until the sauce darkens.
  4. The Marriage Add the boiled potatoes; toss until they are glistening yellow and heated through.
  5. The Final Flourish Finish with a massive handful of fresh coriander and a squeeze of lime.
