THE FUNGAL VEAL-SWELL
(Our Play on Veal with Wild Mushrooms)

Ingredients
- 400g Veal strips
- 200g Wild mushrooms (sliced)
- 1 tsp White pepper
- 1 tsp Garlic powder
- 100ml Double cream
- 50ml Dry White Wine
- 50g Butter
Cooking Method
- The Scorch Sear veal in 1 tbsp oil until charred; remove. Add mushrooms and fry until dark and aromatic.
- The Bloom Add spices and butter with a 30ml splash of wine; the hiss will release the fungal perfume.
- The Swell Add remaining wine and cream; simmer until it reduces to a thick yellow silk.
- The Marriage Return veal for 1 minute to lacquer in the sauce.
- The Final Flourish Top with massive hit of raw parsley and extra white pepper.
