THE FUNGAL-POTATO LAYERS
(Our Play on Romanian Musaca)
Ingredients: 3 Large Potatoes (sliced into rounds), 500g Pork and Beef mince mix, 2 Red onions (pureed), 200g Mushrooms (minced), 3 cloves Garlic, 1 tsp Smoked paprika, 1 tsp Black pepper, 2 Bay leaves, 3 Eggs, 200ml Sour cream...
Ingredients
- 3 Large Potatoes (sliced into rounds)
- 500g Pork and Beef mince mix
- 2 Red onions (pureed)
- 200g Mushrooms (minced)
- 3 cloves Garlic
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 2 Bay leaves
- 3 Eggs
- 200ml Sour cream
Cooking Method
- The Scorch Par-fry potato rounds until golden; remove. Sear meat and mushrooms until charred.
- The Architect Fry onion puree and garlic in the fat until sweet.
- The Bloom Add spices and bay leaves with a 30ml splash of stock; the steam will release the woody perfume.
- The Marriage Layer potatoes and meat in a dish. Whisk eggs and sour cream together; pour over the top.
- The Bake Roast at 190°C for 30 minutes until the top is a bubbling, charred gold.
- The Final Flourish Finish with a massive hit of raw fresh dill.
