THE FUNGAL GARLIC-SCORCH
(Our Play on Champiñones al Ajillo)
Ingredients: 400g Button mushrooms (halved), 6 cloves Garlic (minced), 50ml Olive oil, 1 tsp Chili flakes, 1 tsp Salt, 1 tsp Black pepper, Fresh Parsley, 1 Lemon (juiced)...

- 400g Button mushrooms (halved)
- 6 cloves Garlic (minced)
- 50ml Olive oil
- 1 tsp Chili flakes
- 1 tsp Salt
- 1 tsp Black pepper
- Fresh Parsley
- 1 Lemon (juiced)
Cooking Method
- The Scorch Fry mushrooms in a dry pan on maximum heat until they release their water and turn dark brown.
- The Architect Add the oil and garlic; sauté until the garlic is golden and smells like a biscuit.
- The Bloom Add spices with a tiny 15ml splash of water; the heat will bloom the chili oils.
- The Marriage Toss everything until the garlic-oil lacquers the mushrooms.
- The Final Flourish Finish with a massive hit of raw fresh parsley and lemon juice.
