- 300g Cooked Mushroom Rice (cold)
- 1 tsp Smoked paprika
- 1 tsp Dried Thyme
- 125g Manchego (cubed)
- 100g Breadcrumbs
- 1 Egg
Cooking Method
- The Bloom Mix the cold rice with the spices; add a tiny 10ml splash of sherry to help the herbs swell into the rice.
- The Build Form rice balls; stuff a cheese cube into the center of each.
- The Coat Roll in egg then breadcrumbs until heavily crusted.
- The Scorch Deep fry at 180°C until the exterior is a dark, rock-hard gold and cheese is melting.
- The Final Flourish Serve with a raw hit of garlic aioli and fresh parsley.
