- 300g Cooked Mushroom Risotto (cold)
- 1 tsp Chili flakes
- 1 tsp Dried Thyme
- 125g Mozzarella (cubed)
- 100g Panko breadcrumbs
- 1 Egg
Cooking Method
- The Bloom Mix the cold risotto with the spices; add a tiny 10ml splash of water to help the herbs swell into the rice.
- The Build Form rice balls; stuff a mozzarella cube into the center of each.
- The Coat Roll in egg then panko until heavily crusted.
- The Scorch Deep fry at 180°C until the exterior is a dark, rock-hard gold and cheese is melting.
- The Final Flourish Serve with a raw hit of truffle oil and fresh parsley.
