- 500g Beef mince
- 1 Onion (diced)
- 1 Potato (tiny cubes)
- 30g Raisins
- 1 tsp Cumin
- 1 tsp Cinnamon
- 1 tsp Black pepper
- 200g Tomato passata
- 50ml Beef stock
Cooking Method
- The Scorch Fry beef, onions, and potatoes in oil until deeply browned and crispy.
- The Bloom Add spices and raisins with a 30ml splash of stock; the steam will swell the raisins and woodiness.
- The Swell Add passata; simmer for 10 minutes until the potato is soft and the sauce is a thick lacquer.
- The Final Flourish Top with raw fresh coriander and a hit of raw lemon juice.
