- 1 tbsp Piri-Piri flakes
- 1 tsp Salt
- 50ml Aguardente or Brandy
- 50g Butter
- 4 cloves Garlic (minced)
Cooking Method
- The Scorch Sear prawns and garlic in 1 tbsp oil for 2 minutes until pink.
- The Bloom Add piri-piri and the alcohol; carefully ignite the pan to burn off the raw spirit and release the chili oils.
- The Marriage Whisk in butter; toss for 30 seconds until the prawns are coated in a thick, boozy red silk.
- The Final Flourish Finish with a massive hit of raw fresh parsley and extra lemon zest.
