Ingredients: 400g King prawns, 1 tbsp Piri-Piri flakes, 1 tsp Salt, 50ml Aguardente or Brandy, 50g Butter, 4 cloves Garlic (minced)...

Ingredients

  • 400g King prawns
  • 1 tbsp Piri-Piri flakes
  • 1 tsp Salt
  • 50ml Aguardente or Brandy
  • 50g Butter
  • 4 cloves Garlic (minced)

Cooking Method

  1. The Scorch Sear prawns and garlic in 1 tbsp oil for 2 minutes until pink.
  2. The Bloom Add piri-piri and the alcohol; carefully ignite the pan to burn off the raw spirit and release the chili oils.
  3. The Marriage Whisk in butter; toss for 30 seconds until the prawns are coated in a thick, boozy red silk.
  4. The Final Flourish Finish with a massive hit of raw fresh parsley and extra lemon zest.
