(Our Play on Spiced Sherry Poached Pears)

- 300ml Sweet Sherry (Pedro Ximénez)
- 100ml Water
- 50g Sugar
- 1 Cinnamon stick
- 2 Star anise
- 1 tsp Black peppercorns
- 3 Cloves
Cooking Method
- The Swell Bring Sherry, water, and sugar to a simmer in a small pot.
- The Bloom Add the spices; simmer for 5 minutes to release the deep woody and licorice oils.
- The Marriage Add pears; simmer for 15 minutes until soft and stained dark purple.
- The Swell Remove pears; boil the liquid until it reduces to a thick, spicy syrup.
- The Final Flourish Top with raw orange zest and a dollop of mascarpone.
