Ingredients: 4 Pears (peeled), 300ml Sweet Sherry (Pedro Ximénez), 100ml Water, 50g Sugar, 1 Cinnamon stick, 2 Star anise, 1 tsp Black peppercorns, 3 Cloves...

  • 4 Pears (peeled)
  • 300ml Sweet Sherry (Pedro Ximénez)
  • 100ml Water
  • 50g Sugar
  • 1 Cinnamon stick
  • 2 Star anise
  • 1 tsp Black peppercorns
  • 3 Cloves

Cooking Method

  1. The Swell Bring Sherry, water, and sugar to a simmer in a small pot.
  2. The Bloom Add the spices; simmer for 5 minutes to release the deep woody and licorice oils.
  3. The Marriage Add pears; simmer for 15 minutes until soft and stained dark purple.
  4. The Swell Remove pears; boil the liquid until it reduces to a thick, spicy syrup.
  5. The Final Flourish Top with raw orange zest and a dollop of mascarpone.
