Ingredients

  • 600g Pork shoulder (cubed)
  • 1 tsp Five-spice powder
  • 1 Cinnamon stick
  • 2 Star anise
  • 100ml Soy sauce
  • 2 tbsp Brown sugar

Cooking Method

  1. The Scorch Sear pork in oil until dark and browned.
  2. The Bloom Add spices and a splash of water; fry for 2 minutes to release the aromatic oils.
  3. The Simmer Add soy, sugar, and 200ml water; cover and simmer low for 40 minutes until tender.
  4. The Reduction Uncover and boil down until the sauce is a dark, oily lacquer.
