Ingredients
- 600g Pork shoulder (cubed)
- 1 tsp Five-spice powder
- 1 Cinnamon stick
- 2 Star anise
- 100ml Soy sauce
- 2 tbsp Brown sugar
Cooking Method
- The Scorch Sear pork in oil until dark and browned.
- The Bloom Add spices and a splash of water; fry for 2 minutes to release the aromatic oils.
- The Simmer Add soy, sugar, and 200ml water; cover and simmer low for 40 minutes until tender.
- The Reduction Uncover and boil down until the sauce is a dark, oily lacquer.
