THE FIRE-WOK BASIL REEF
(Our Play on Thai Basil Prawns / Pad Krapow Goong)

Ingredients
- 400g King prawns
- 3 Red bird's eye chilies (smashed)
- 4 cloves Garlic (minced)
- 1 tbsp Oyster sauce
- 1 tbsp Soy sauce
- 1 tsp Sugar
- Handful of fresh Basil leaves
Cooking Method
- The Scorch Fry garlic and chilies in 1 tbsp oil until they start to blacken and smell sharp.
- The Sear Add prawns; stir-fry for 2 minutes until they turn pink.
- The Bloom Add the silk ingredients with a 15ml splash of water to form a dark, savory glaze.
- The Marriage Toss in the basil; stir until the leaves wilt and coat the prawns.
- The Finish Serve immediately while the basil is still vibrant green.
