Ingredients: 400g King prawns, 3 Red bird's eye chilies (smashed), 4 cloves Garlic (minced), 1 tbsp Oyster sauce, 1 tbsp Soy sauce, 1 tsp Sugar, Handful of fresh Basil leaves...

Ingredients

  • 400g King prawns
  • 3 Red bird's eye chilies (smashed)
  • 4 cloves Garlic (minced)
  • 1 tbsp Oyster sauce
  • 1 tbsp Soy sauce
  • 1 tsp Sugar
  • Handful of fresh Basil leaves

Cooking Method

  1. The Scorch Fry garlic and chilies in 1 tbsp oil until they start to blacken and smell sharp.
  2. The Sear Add prawns; stir-fry for 2 minutes until they turn pink.
  3. The Bloom Add the silk ingredients with a 15ml splash of water to form a dark, savory glaze.
  4. The Marriage Toss in the basil; stir until the leaves wilt and coat the prawns.
  5. The Finish Serve immediately while the basil is still vibrant green.
