THE FIRE-VINEGAR MIST
(Our Play on Quick Hot and Sour Soup)
Ingredients: 800ml Veg stock, 3 tbsp Black vinegar, 2 tbsp Soy sauce, 1 tsp White pepper, 1 tbsp Chili oil, 100g Tofu (matchsticks), 50g Mushrooms (sliced), 1 Egg (whisked)...
Ingredients
- 800ml Veg stock
- 3 tbsp Black vinegar
- 2 tbsp Soy sauce
- 1 tsp White pepper
- 1 tbsp Chili oil
- 100g Tofu (matchsticks)
- 50g Mushrooms (sliced)
- 1 Egg (whisked)
Cooking Method
- The Boil Bring stock, soy, and vinegar to a boil; add the tofu and mushrooms.
- The Bloom Add white pepper and a 20ml splash of chili oil; the vinegar will make the spice swell into the broth.
- The Swirl Whisk a cornflour slurry (1 tbsp flour + 2 tbsp water) into the soup until it thickens into a mist.
- The Marriage Pour the egg in a thin stream while stirring to form silk ribbons.
- The Final Flourish Finish with a massive hit of fresh spring onions.
