Ingredients: 150g Guanciale or Pancetta (diced), 1 small onion (pureed), 2 tsp Chili flakes, 400g Tomato passata, 100g Pecorino Romano, 200g Bucatini or Spaghetti...

Ingredients

  • 150g Guanciale or Pancetta (diced)
  • 1 small onion (pureed)
  • 2 tsp Chili flakes
  • 400g Tomato passata
  • 100g Pecorino Romano
  • 200g Bucatini or Spaghetti

Cooking Method

  1. The Scorch Fry the pork in a dry pan until the fat renders and the meat is rock-hard crispy; remove meat.
  2. The Architect Fry onion puree in the pork fat until sweet and golden.
  3. The Bloom Add chili flakes with a 20ml splash of water to form a spicy red paste.
  4. The Marriage Add passata; simmer for 5 minutes then toss with pasta and the crispy pork.
  5. The Final Flourish Top with a massive grating of raw cheese and fresh black pepper.
