- 150g Guanciale or Pancetta (diced)
- 1 small onion (pureed)
- 2 tsp Chili flakes
- 400g Tomato passata
- 100g Pecorino Romano
- 200g Bucatini or Spaghetti
Cooking Method
- The Scorch Fry the pork in a dry pan until the fat renders and the meat is rock-hard crispy; remove meat.
- The Architect Fry onion puree in the pork fat until sweet and golden.
- The Bloom Add chili flakes with a 20ml splash of water to form a spicy red paste.
- The Marriage Add passata; simmer for 5 minutes then toss with pasta and the crispy pork.
- The Final Flourish Top with a massive grating of raw cheese and fresh black pepper.
