THE FIRE-STUNG STRANDS
(Our Play on Fideuá - Spanish Noodle Paella)

- 200g Short fideo noodles (or broken vermicelli)
- 200g Mixed seafood
- 100g Chorizo
- 1 tsp Saffron
- 1 tsp Smoked paprika
- 500ml Fish stock
- 2 cloves Garlic (minced)
Cooking Method
- The Scorch Fry noodles in 1 tbsp oil until they are dark brown and smell like roasted nuts.
- The Architect Add garlic and chorizo; sauté for 2 minutes.
- The Bloom Add spices with a 30ml splash of stock; the steam will release the saffron perfume.
- The Marriage Add remaining stock and seafood; simmer for 8 minutes until liquid is gone and noodles are soft.
- The Final Flourish Top with raw fresh parsley and a massive dollop of garlic aioli.
