- 400g Tomato passata
- 2 tsp Chili flakes
- 1 Red onion (diced)
- 2 cloves Garlic
- 1 tsp Dried Oregano
- 1 tsp Sugar
Cooking Method
- The Swell Whisk polenta into boiling salted water; simmer for 10 minutes until thick.
- The Architect In a separate pan, sauté onions and garlic until golden brown.
- The Bloom Add chili and oregano with a 30ml splash of water to release the fiery oils.
- The Marriage Add passata and sugar; simmer for 8 minutes until it forms a thick red lacquer.
- The Final Flourish Pour the polenta onto a board; top with the fire-silk and raw fresh basil.
