Ingredients: 200g Polenta, 400g Tomato passata, 2 tsp Chili flakes, 1 Red onion (diced), 2 cloves Garlic, 1 tsp Dried Oregano, 1 tsp Sugar...

  • 200g Polenta
  • 400g Tomato passata
  • 2 tsp Chili flakes
  • 1 Red onion (diced)
  • 2 cloves Garlic
  • 1 tsp Dried Oregano
  • 1 tsp Sugar

Cooking Method

  1. The Swell Whisk polenta into boiling salted water; simmer for 10 minutes until thick.
  2. The Architect In a separate pan, sauté onions and garlic until golden brown.
  3. The Bloom Add chili and oregano with a 30ml splash of water to release the fiery oils.
  4. The Marriage Add passata and sugar; simmer for 8 minutes until it forms a thick red lacquer.
  5. The Final Flourish Pour the polenta onto a board; top with the fire-silk and raw fresh basil.
