THE FIRE-STUNG SAUSAGE GRAINS
(Our Play on Balkan Rice with Chorizo Influence)
Ingredients: 200g Smoked Balkan Sausage (sliced), 300g Carolino rice, 1 Red onion (minced), 2 cloves Garlic, 1 Bell pepper (diced), 1 tbsp Smoked paprika, 1 tsp Black pepper, 700ml Chicken stock, 1 tbsp Vinegar...
Ingredients
- 200g Smoked Balkan Sausage (sliced)
- 300g Carolino rice
- 1 Red onion (minced)
- 2 cloves Garlic
- 1 Bell pepper (diced)
- 1 tbsp Smoked paprika
- 1 tsp Black pepper
- 700ml Chicken stock
- 1 tbsp Vinegar
Cooking Method
- The Scorch Fry sausage in oil until charred; remove. Sauté onion and pepper in the fat until charred.
- The Bloom Add spices and rice; toast for 1 minute with a 30ml splash of stock to release the oils.
- The Swell Add remaining stock; cover and simmer for 15 minutes until absorbed.
- The Marriage Return sausage; stir in vinegar to sharpen the smoky red silk.
- The Final Flourish Top with a massive hit of raw fresh parsley.
