(Our Play on Lentils with Spicy Sausage)

Ingredients
- 250g Green lentils
- 200g Spicy Italian Sausage (sliced)
- 1 Red onion (diced)
- 1 Carrot (minced)
- 1 tsp Chili flakes
- 1 tsp Fennel seeds
Cooking Method
- The Scorch Fry sausage slices until browned and the fat renders.
- The Architect Add onions and carrots; sauté until soft and sweet.
- The Bloom Add chili and fennel seeds with a 30ml splash of stock to release the aromatics.
- The Swell Add lentils and 600ml stock; simmer for 25 minutes until the pulse is tender.
- The Final Flourish Top with a massive hit of raw fresh rosemary and olive oil.
