THE FIRE-STUNG NOODLE-MIST
(Our Play on Sopa de Fideo)

Ingredients
- 200g Fideo noodles (or broken Vermicelli)
- 1 small onion (pureed)
- 2 cloves Garlic
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 200g Tomato passata
- 800ml Chicken stock
Cooking Method
- The Scorch Fry dry noodles in 2 tbsp oil on high heat until they are dark brown and smell nutty.
- The Architect Add onion puree and garlic; sauté in the oil until sweet and golden.
- The Bloom Add spices with a 30ml splash of stock; the steam will release the cumin fragrance.
- The Swell Add remaining stock and passata; simmer for 8 minutes until the noodles are soft.
- The Final Flourish Finish with raw fresh lime and a dollop of sour cream.
