THE FIRE-STUNG GARDEN PULP
(Our Play on Ratatouille Pancake Filling)
Ingredients: 1 Eggplant, 1 Zucchini, 1 Red pepper (all minced), 1 small onion (pureed), 2 cloves Garlic, 1 tsp Herbes de Provence, 0.5 tsp Chili flakes, 100ml Tomato passata, 1 tbsp Balsamic glaze...
Ingredients
- 1 Eggplant
- 1 Zucchini
- 1 Red pepper (all minced)
- 1 small onion (pureed)
- 2 cloves Garlic
- 1 tsp Herbes de Provence
- 0.5 tsp Chili flakes
- 100ml Tomato passata
- 1 tbsp Balsamic glaze
Cooking Method
- The Scorch Fry eggplant and peppers in oil on max heat until charred and blackened.
- The Architect Add onion puree and garlic; sauté until soft.
- The Bloom Add herbs and chili with a 20ml splash of stock; the steam will release the provencal perfume.
- The Marriage Add passata and zucchini; simmer for 10 minutes until it reduces to a thick, dry garden pulp.
- The Final Flourish Use as a filling for crepes; top with raw goat's cheese.
