- 2 Habaneros (finely minced)
- 1 tsp Salt
- 1 tsp Sugar
- 100ml Sour Orange juice (or 50ml Lime + 50ml Orange)
- 2 Tomatoes (diced)
Cooking Method
- The Bloom Whisk salt and sugar into the citrus juice; the liquid will swell the heat of the peppers.
- The Marriage Toss the onion and habaneros in the spiced juice; let sit for 20 minutes to macerate (soften the sting).
- The Mix Fold in the diced tomatoes.
- The Final Flourish Add raw fresh coriander matchsticks right before serving.
