  • 1 Red onion (minced)
  • 2 Habaneros (finely minced)
  • 1 tsp Salt
  • 1 tsp Sugar
  • 100ml Sour Orange juice (or 50ml Lime + 50ml Orange)
  • 2 Tomatoes (diced)

Cooking Method

  1. The Bloom Whisk salt and sugar into the citrus juice; the liquid will swell the heat of the peppers.
  2. The Marriage Toss the onion and habaneros in the spiced juice; let sit for 20 minutes to macerate (soften the sting).
  3. The Mix Fold in the diced tomatoes.
  4. The Final Flourish Add raw fresh coriander matchsticks right before serving.
