THE FIRE-STUNG FUNGAL-FOLD
(Our Play on Mushroom & Onion Tacos)
Ingredients: 400g Mixed mushrooms (sliced), 2 Red onions (petals), 1 tsp Chili flakes, 1 tsp Cumin, 1 tsp Salt, 3 cloves Garlic (minced), 3 tbsp Olive oil, 1 tbsp Balsamic vinegar, 1 tsp Honey...
Ingredients
- 400g Mixed mushrooms (sliced)
- 2 Red onions (petals)
- 1 tsp Chili flakes
- 1 tsp Cumin
- 1 tsp Salt
- 3 cloves Garlic (minced)
- 3 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- 1 tsp Honey
Cooking Method
- The Scorch Fry mushrooms and onions in oil on maximum heat until they release their water and turn dark brown.
- The Architect Add garlic; sauté until golden and fragrant.
- The Bloom Add spices with a tiny 20ml splash of water; the steam will release the woody perfume.
- The Marriage Add vinegar and honey; toss for 2 minutes until the mushrooms are lacquered.
- The Final Flourish Serve in warm tortillas with raw fresh coriander and lime.
