THE FIRE-STUNG FLOWER-CLUSTERS
(Our Play on Mexican Spiced Roasted Cauliflower)

Ingredients
- 1 Large Cauliflower (tiny florets)
- 1 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Salt
- 50ml Olive oil
- 1 tbsp Honey
- 1 Lime (juiced)
Cooking Method
- The Mix Toss florets with oil and spices in a large bowl.
- The Bloom Add a tiny 15ml splash of water to the bowl; the moisture will bloom the chili powder and help it stain the florets.
- The Scorch Roast at 210°C for 25 minutes until the edges are blackened and the stalks are tender.
- The Marriage Whisk lime juice and honey; toss with the hot cauliflower immediately after roasting.
- The Final Flourish Top with raw fresh coriander and toasted pumpkin seeds.
