  • 300g Cooked Risotto rice (cold)
  • 2 tbsp 'Nduja (Spicy Pork Paste) or 2 tsp Chili flakes
  • 125g Mozzarella (tiny cubes)
  • 50g Panko breadcrumbs
  • 1 Egg

Cooking Method

  1. The Bloom Whisk the 'nduja or chili flakes with a tiny 10ml splash of warm water to soften the fire.
  2. The Build Mix the cold rice with the spicy paste; stuff each ball with a cube of mozzarella.
  3. The Coat Roll in egg then panko until heavily crusted.
  4. The Scorch Deep fry at 180°C for 4 minutes until dark golden and the cheese core is melting.
  5. The Final Flourish Serve with a raw hit of fresh lemon zest on top.
