- 300g Cooked Risotto rice (cold)
- 2 tbsp 'Nduja (Spicy Pork Paste) or 2 tsp Chili flakes
- 125g Mozzarella (tiny cubes)
- 50g Panko breadcrumbs
- 1 Egg
Cooking Method
- The Bloom Whisk the 'nduja or chili flakes with a tiny 10ml splash of warm water to soften the fire.
- The Build Mix the cold rice with the spicy paste; stuff each ball with a cube of mozzarella.
- The Coat Roll in egg then panko until heavily crusted.
- The Scorch Deep fry at 180°C for 4 minutes until dark golden and the cheese core is melting.
- The Final Flourish Serve with a raw hit of fresh lemon zest on top.
